Quick and Easy Dinner: Taco Soup #SoupaPalooza

Wednesday nights are always a quick and easy dinner night for us.  I usually try to do something in our Crock Pot so that I know it will be done in time for me to head out the door for Youth Group.

And when I found out about Tidy Mom’s SoupaPalooza, I decided I would share one of our family quick and easy dinner favorites: Taco Soup!

Taco Soup

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 pkg taco seasoning
  • 1 can fiesta nacho soup
  • 1 can black beans
  • 1 can chili beans
  • 1 can diced tomatoes
  • 1/2 bag of frozen corn
  • 1/2 bag of seasoning blend frozen veggies
  • 1 can of tomato juice or 1/2 bottle of tomato juice

Directions:

  • Brown your meat. Drain and rinse.
  • Add all the ingredients to a soup pot
  • Cook until hot, about 30 minutes

You can also put in your Crock Pot for about 3 hours.  Any longer and it will just get spicier!

2012 Monthly Reading – February Check In

Another month has come and gone!  This year is already flying by, which is really nice for this 3rd trimester pregnant lady!  Every passing day brings us one day closer to the arrival of our little bundle of joy!

I really enjoyed my reading material for this month.  I learned a lot and had a really fun time reading through the material I picked out!  I think this goal has been really good for me ;)

40 Days in the Word by Rick Warren: I’m still working on this one, since it is a 40 day study, but it has been incredible.  I really feel like I have grown in my ability to study the Word and get a deeper understanding.  If you are looking for something to really help you with your quiet times and in your spiritual growth, I totally recommend this book to you!

Organized Simplicity: The Clutter-Free Approach to Intentional Living by Tsh Oxenreider: This book was incredible.  Full of so many ideas on how to simplify your home, I was so inspired, which was what this pregnant momma really needed.  If only I had the energy to inact all that she wrote about, especially her 10 day plan.  But, I decided to table the idea until after the baby comes.  I did, however, make a list of a few things I am going to do now to make things a little smoother once the baby comes.  One of those ideas, you can read about here.

One of the other things I really enjoyed about this book was the wealthy of info on how to start a family binder.  I totally plan to use her daily docket once we set up our home office.  This will help me a lot with 3 kids to take care of ;)

Seasons of Grace series by Beverly Lewis:  What a great fun reading for me.  I has such a hard time putting this series down, but was sad when it was finished.  The story of Grace’s journey to find her mother and the secrets her mother was trying to uncover was amazing.  The suspense and the irony of the whole story made this series stand out above the rest.  I totally recommend this series to any Amish Fiction lover.  Or really to any fiction lover period.  You won’t be sorry.  I even have my mom begging to read it ;)
